These scrumptious melt-in-the-mouth biscuits are ridiculously simple to make and are the perfect accompaniment to your afternoon cuppa. The following recipe is also made without eggs, so if you are vegan all you have to do is substitute the butter for an animal-friendly alternative!
Ingredients
3 oz golden syrup (see note below)
1 tsp ground ginger powder, sifted
2 level tsp caster sugar
2 oz butter
4 oz self-raising flour (or plain flour with 1 tsp baking powder)
1/2 tsp baking soda
Method
1. Mix flour, ginger powder, and soda and sieve.
2. Add sugar.
3. Melt butter, stir in golden syrup. Add to dry ingredients and mix well.
4. Make small balls of dough and flatten.
5. Bake at 180ÂșC for 8-13 minutes (or until golden brown).
6. Remove and cool on wire rack.
As you can probably see, the cookies have been made in two different ways. The more rustic-looking lumpy-bumpy cookies were thrown rather haphazardly into the baking tray, giving them a homemade look. If you're more of a perfectionist, you can roll each ball of dough into a perfect circle with your palms and flatten it before putting it on the tray to achieve a prettier-looking cookie. Personally, I prefer the less-professional looking ones!
Edited to add: A few US readers have asked me what this mysterious golden syrup is that I use in many of my recipes. It's a sugary-syrup with a honey-like consistency and nutty taste, and I'm afraid there's no exact alternative for it (some people suggest using corn syrup but apparently it's not quite the same!) However, I found out that golden syrup IS available in the US - and if you can't find it in your local grocery store, I've found some on Amazon
