Molten Lava Chocolate Cake

Quite a few readers have asked me: where are all these recipes FROM? The answer is: all over the place! They've been collected from books, magazines, websites, friends, etc. Mum and I have been baking together since I was barely old enough to read, and we type up the tried and true, foolproof, delicious recipes and put them into binders, which is why I normally don't know where a specific recipe is from (sorry!) We normally modify it to our own taste, though, so I hope I'm not violating any sort of copyright laws!

This ooey gooey chocolate cake is to die for. It has a cake-like outer section, but the inside is filled with delicious liquid sauce...

Ingredients
4 tbsp plain butter, room temperature
1/3 cup granulated sugar
3 large eggs
1/3 cup flour
1/4 tsp salt
8 oz melted bittersweet chocolate
Icing sugar for dusting (optional)
Whipped cream (to serve)

Method
1. Preheat oven to 200ºC.
2. Generously butter 6 muffin tins (we used crème brulée cups), dust with granulated sugar, and tap out excess. Set aside.
3. Cream butter and granulated sugar in an electric mixer until fluffy.
4. Add eggs one at a time, beating well after each addition.
5. With the mixer on low speed, beat in flour and salt until just combined. Beat in the chocolate.
6. Divide batter evenly into prepared cups.
7. Place cups in oven. Bake just until tops of the cakes no longer jiggle when the pan is lightly shaken - this should be 8 to 10 minutes. Remove from oven, let stand 10 minutes.
8. Turn out cakes, place on serving plates, bottom side up. Dust with icing sugar.
9. Serve with plain whipped cream OR mix 300 ml whipped cream with 1/2 tbsp brown sugar and 1 tbsp Grand Marnier.

  2. Yummy!!! I love the Gordon Ramsay recipe version of this... it's so yummy! In fact to be really sick, i decided to bake the entire mix in one big over proof dish for me and the man instead of 4 ramekins!

  4. I am calorie conscious. Yet the pic is so tempting. I am glad it is just a pic and not real thing that I could gobble up. And I am glad you are not in Delhi, or else I would have eaten your recipes on everyday basis. :) Just kidding. You and your mom are so talented.
    Ok I am pure vegetarian. Don't eat eggs. What would be substitute of eggs in your recipe?

  19. I am totally going to try making this!! First time I had this cake was when we went on holiday in turkey 2 summers ago - it was totally worth stuffing myself with dessert for!!

  23. This looks amazing! Your mother and your idea of organizing your recipes in binders sounds so much like my mother and I's way of tackling and organizing recipes. We have a binder for breakfast, a binder for salads, and a tremendously large binder for desserts - of course. =)

  39. i dont usually like chocolate cake because they are never moist enough, however.. a liquid center couldn't sound anymore perfect! i've been itching to bake something for a while and might have to give this a try for a chocolate loving friends birthday. thanks for the recipe!
